摘　　要：食品添加剂是食品不可缺少的重要原料,它们对改善食品质量和色香味、提升食品档次和营养价值以及防腐发挥着积极作用。但滥用食品添加剂引发的食品安全问题已经引起人们的广泛关注。文章仅就几种常见的化学添加剂从化学结构出发阐述其作用及毒性,旨在为合理使用化学合成食品添加剂提供理论参考的依据。The food additive is food essential important raw material, improve their quality of the food color and flavor to enhance food quality and nutritional value, as well as playing an active role in anti-corrosion.
