片球菌素对酸奶中单核细胞增多症李氏杆菌的抑菌作用  被引量:3

摘  要:将从泡菜中分离出的一株产片球菌素的乳酸片球菌接种至MRS培养基,培养后采用基于pH的吸附和解吸附法提取片球菌素,以单核细胞增多症李氏杆菌CVCC1595(4.55×108cfu/mL)为指示菌,采用琼脂扩散法,测定片球菌素的抑菌活性。结果表明,其对单核细胞增多症李氏杆菌CVCC1595的最小抑菌浓度为1.6g/mL,随机活性单位为21.875AU/mg。将片球菌素(0.01mg/mL)添加到人工污染单核细胞增多症李氏杆菌CVCC1595的酸奶(6.305logcfu/mL)中,1d以后其菌落数下降为4.301logcfu/mL,并可以在30d的实验周期内保持抑菌作用。A Pediococcus acidilactici strain, which isolated from traditional fermented Chinese cabbage, was introduced into MRS culture medium, and using adsorption and desorption methods based on pH to extract bacteriocin of Pediococcus acidilactici. The Listeria mononucleosis CVCC1595 (4.55×10^8 cfu/mL) was taken as indicative bacteria, and the bacteriostasis of bacteriocin of Pediococcus acidilactici was determined by agar diffusion method. The results indicated that the minimum inhibitory concentration of bacteriocin of Pediococcus acidilactici against Listeria mononucleosis CVCC1595 was 1.6 g/ml; the random active unit was 21.875 AU/mg. Adding bacteriocin of Pediococcus acidilactici (0.01 mg/mL) into the yogurt that artificially contaminated by Listeria mononucleosis CVCC1595 (6.305 log cfu/mL), the colony counting of Listeria mononucleosis CVCC1595 was decreased to 4.301 log cfu/mL after 24 hours, and it could keep the bacteriostasis lasted 30 days experimental time.
