摘  要:[目的]研究麦瓶草的护绿方法,为开发切实可行的麦瓶草产品提供科学依据和理论指导。[方法]以麦瓶草为材料,采用碱性溶液热烫法和金属离子置换法处理,并测定处理后麦瓶草的外观色泽等级与叶绿素含量。[结果]结果表明:碱性溶液热烫法护绿效果较差,各因素影响的显著性顺序为热汤温度>热烫时间>pH,其中热烫温度为极显著,热烫时间为显著,最佳组合为92℃、4.5min、pH值7.5;金属离子置换法护绿效果好,各因素影响的显著性顺序为Zn2+>Cu2+>Mg2+,其中Zn2+和Cu2+的影响为极显著,最佳组合为Zn2+200 mg/L、Cu2+100 mg/L、Mg2+200mg/L。[结论]从处理后麦瓶草的外观与叶绿素含量角度来看,金属离子置换法明显优于碱液热烫法。[ Objective ] The research aimed to study the green-maintaining methods of Silence conoidea L. and to provide scientific basis and theoretical direction for the development of feasible S. conoidea L. products. [ Method] S. conoidea L. was used for materials and was treated with the alkaline solution blanching and the metal ion displacement. Then the color grades and chlorophyll contents of each treatments were determined. [ Result ] The results showed that the blanching method was less effective on maintaining color than the displacement method. Blancbing temperature was the most significant factor, while blanching time was medium,but more important than pH value. The most suitable combination was 92 ℃ , 4.5 minute,pH value 7.5. Metal ion displacement had better effects on green-maintaining of S. conoidea L.. The significance order of these three ions was Zn^2+ 〉 Cu^2+ 〉 Mg^2+ ,and the former two factors had significantly effects. The best combination of the metal ion was Zn^2+ 200 mg/L, Cu^2+ 100 mg/L , Mg^2+ 200 mg/L. [ Conclusion ] The metal ion displacement method had better effects than the alkaline solution blanching method on the the green-maintaining of S. conoidea L. from the angle of appearances and chlorophyll contents.
