摘 要:目的探讨蔬菜、水果及大豆食物对高血脂病人的总胆固醇(TC)和甘油三酯(TG)变化的影响。方法420名佛山市顺德区患高血脂的社区居民(男166,女254),25~88岁,基线检查后的0.5~1年(平均9.5月)内接受了随访问卷调查,内容包括血脂检查、随访期间内的膳食习惯、体力活动及其它健康相关因素等。结果在校正相关混杂因素后,协方差分析显示:蔬菜、水果和大豆食物(以蛋白质计)摄入量与血胆固醇的改善呈极显著的剂量-效应关系(P<0.001=,其日均摄入量分别从77.9,5.08和0g升至560,157和1.12g时,血清TC的降幅分别相当于其基线值的13.5%,12.0%和14.5%(P<0.001)。单因素分析结果组间差异更显著,其降幅介于22%~25%。豆类与TG呈类似的联系,其降幅为17.4%(P<0.05)。蔬菜水果与TG之间的关联无统计学意义。上述食物与胆固醇的联系在男女亚组相近,但大豆食物对TG的改善作用在男性明显优于女性。结论增加蔬菜、水果和大豆食物的摄入量可显著改善高血脂病人血脂(尤其是胆固醇)状况。Objective To assess the effect of vegetables, fruits and soyoods on blood lipid profiles in hyperlipemia Chinese. Method Four hundred and twenty hyperlipemia patients were recruited for study from a community in Shunde, Fushang city. Their serum total cholesterol (TC) and triglycerides (TG) were re-examined over a mean interval of 285 d post the first tests. Habitual dietary intakes and other health-related information during the follow-up period were collected via face-to-face interview. Results After controlling for potential confounders, ANCOVA analysis showed a strong dose-dependent inverse association between vegetable, fruit, soyfood consumption and TC changes (P〈0.001) with 13.5%, 12.0% and 14.5% of decreases respectively, when mean daily intakes of vegetables, fruits and soyfoods (in protein) increased from 77.9, 5.08, 0 g to 560, 157, 1.12 g respectively (P〈0.001). The association between soyfoods and TG was similar, about 17.4% decrease (P〈0.05). No significant association between vegetables or fruits and TG were observed. Similar associations of vegetables, fruits and soyfoods with TC were found in men and women. However, the favorable effect of soyfoods on TG was much more significant in men than in women. Conclusion Increasing intakes of vegetables, fruits or soyfoods may significantly improve serum lipids (especially TC) in hyperlipemia patients.
