摘 要:[目的]研究复合酶法提取野木瓜汁的工艺。[方法]以野木瓜为原料,采用复合酶法提取野木瓜汁。[结果]确定了果胶酶与纤维素酶的最佳添加比例为1∶6。复合酶提取野木瓜汁的最佳酶解工艺条件为:复合酶添加量1.0%,酶解温度45℃,pH值4.0,酶解时间2.5 h。在此最佳条件下,野木瓜出汁率可达56.7%,比空白样的出汁率13.7%多出了43.0个百分点。[结论]找到了一种提取野木瓜汁的方法。[ Objective ] The research aimed to study the technology of extracting Chaenomeles cathayensis juice by compound enzymolysis method. [ Method] Choosing Chaenomeles cathayensis as raw material ,the juice yield of the Chaenomeles cathayensis was studied by compound enzymolysis method. [ Result ] The resuhs showed that the best proportion of pectinase and cellulase was 1 : 6. The optimum conditions of extracting the Chaenomeles cathayensis juice by compound enzymolysis method was as follow :The enzymolysis temperature 45 ℃, the amount of compound enzyme( petinase:cellulase = 1:6 ) 1.0% ,pH value 4.0, the enzymolysis time 2.5 h. The Chaenomeles cathayensis juice yield could reach 56.7% under this optimum conditions. It was more 43.0 percentage point than the control which reached 13.7% . [ Conclusion ] The study finds a method of extracting Chaenomeles cathayensis juice.
