摘 要:随着餐饮业的蓬勃发展,学界对餐馆经营的研究日益重视。本文通过对国外SSCI和国内CNKI引用的学术期刊所发表的相关文献的梳理,较为系统地对国内外相关研究进行了归纳和评述。国外有关餐馆经营的研究内容涉及两个方面,从餐馆经营者角度来看,包括餐馆定价与成本、餐馆服务、餐馆收益及经营管理,基于餐馆顾客角度,则集中体现在对顾客行为、顾客体验、顾客满意和顾客忠诚的研究,而国内的研究内容主要体现为对经营策略的探讨。在对比国内外餐馆经营研究的基础上,本文对我国餐馆经营研究进行了展望。With the flourishing of catering industry, academic circles pay more attention to restaurant management. This thesis systematically generalizes and comments on the domestic and foreign research through sorting out the academic journals of SSCI and CNKI. The author finds that the foreign research involves two aspects, from the perspective of supervisor including pricing strategy and cost, service quality, profitability and management, and from the perspective of the customer consisting of customer behavior, customer experience, customer satisfaction and customer loyalty. On the other hand, the domestic research concentrates on the discussion of marketing strategy. On the basis of a comparison of the domestic and foreign research, this thesis shows prospect about domestic research on restaurant management.
