摘　　要：目的为了解实施餐饮业量化分级管理效果。方法笔者通过对已实施量化分级管理的餐饮业单位200户餐馆的卫生现状进行调查分析。结果餐饮业卫生许可审查监管工作由原来定性管理向定量管理模式的转变，提高了食品卫生监督水平和效能。但食品卫生监管仍存在主要问题。结论提出了分类设置餐饮业卫生许可审查项目，监管应注重定量、定性相结合的管理模式，以适应新形式餐饮业单位卫生许可监管工作的需要。Objective Puts for the sake of the solution into practice the meal drink ：＇the amount of industry turns the ratings management result. But the key problem that food hygiene takes charge of to still exits. Conclusion Putting forward the classification establishes the meal drinks the industry hygiene admits to investigate the item with take charge of the work should make a point of the sex fixed amount that settle the management mode combines together, adapt to the new form meal drink the industry unit hygiene admits to take charge of the demand of the work.
