摘  要:以新鲜和发酵椰花汁为实验材料,研究新鲜和发酵椰花汁对超氧阴离子的清除能力和对黄嘌呤氧化酶的抑制能力,以及加入Cu2+、Fe2+、Fe3+、Zn2+时对其能力的影响,以原儿茶酸为对照。结果表明,新鲜和发酵椰花汁对于超氧阴离子均有一定的清除能力,但对于黄嘌呤氧化酶的抑制能力比较弱。加入Cu2+、Zn2+对新鲜和发酵椰花汁清除超氧阴离子能力的提高作用较为显著,而Zn2+能够显著的提高其对黄嘌呤氧化酶的抑制能力。Fresh and naturally fermented coconut superoxide anion radical scavenging activity and activities at the presence of metal ions of Cu^2+, Fe^2+, result showed that fresh and naturally fermented scavenging activity and a lower xanthine oxidase superoxide anion radical scavenging activities at the inflorescence saps were collected .to determine their xanthine oxidase inhibition activity, as well as the Fe^3+ and Zn^2+, with protocatechuic acid as control. The coconut saps had a high superoxide anion radical inhibition activity, but improved most obviously their presence of Cu^2+ and Zn^2+, and obviously their xanthine oxidase inhibition activities at the presence of Zn^2+.
