摘 要:目的为了解南京市栖霞区食品卫生餐具消毒质量,切断食源性疾病的发生和传播,保障消费者的身体健康,为进一步规范栖霞区餐饮业的卫生监督管理提供科学依据。方法对2005—2008年栖霞区653家饮食业餐具连续4年的检测结果进行分析。按GB14934-94《食(饮)具消毒卫生标准》中的方法进行。结果4年的餐具大肠菌群指标合格率在62.3~75.2%之间,4年间合格率差异有统计学意义(χ2=330.25,P<0.01)。不同种类餐具大肠菌群指标合格率在68.9%~91.5%之间,差异有统计学意义(χ2=365.38,P<0.01)。结论该区餐饮业餐具消毒合格率偏低,应加强这方面的管理,确保人民的饮食卫生。[ Objective] To study the disinfection quality of tableware in Qixia district of Nanjing city, reduce occurrence and transmission of food-borne disease to ensure the health of consumers, provide scientific basis for standardizing of health inspection and management of catering trade. [ Methods] The continuous detection results of tableware of 653 catering trades in Qixia district during 2005--2008 were analyzed, according to the methods of Hygienic standard for disinfection of dinner and drinking set (GB 14934 - 94). [Results] The qualified rate of coliform bacteria index of tableware was 62.3%- 75.2% in 4 years, there was significant diffcl:ence in qualified rate among 4 years ( χ^2= 330.25, P 〈 0.01). The qualified rate of coliform bacteria index of different kinds of tableware was 68.9% -91.5%, the difference was significant ( χ^2 = 365.38, P 〈 0.01 ). [ Conclusion ] The eligible disinfection rate of tableware in catering trade was low. The related management should be strengthened to ensure dietetic health.
