摘  要:围绕食品专用粉,介绍了3种产出方法,即:配麦法、配粉法、剖流法。以代数法导出2种广义配比计算通式,即:反比格式计算和公式计算,对专用粉的概念提出了狭义性与广义性。Three special food floor production methods, i.e. wheat mixing method, flour mixing method and split milling method, were reviewed, and two generalized proportion calculation formula, i.e. inverse proportion calculation and formula calculation, were deduced by mathematical method. The concepts of special flour in narrow sense and broad sense were provided. The special flour had three characteristics and the development prospect was consistent to and superior to that of grade flour.
