摘  要:冷却肉以其优质的口感和丰富的营养已成为国内外生鲜肉生产的主流。假单胞菌是导致冷却肉腐败的主要微生物。预测微生物学的核心在于建立完善的数学模型,利用获得的实验数据,建立初级和次级模型,描述特定腐败菌在不同温度、pH值、水分活度下的生长动态。应用数学模型预测冷却肉的货架期可以有效的控制肉的品质,同时对冷却肉货架期预测及其在运输、贮藏、加工过程中的环境控制具有重要的参考价值。Because of its wonderful taste and rich nutrition, chilled meat has become the mainstream of fresh meat production at home and abroad. Pseudomonas is the most important kind of microbe that cause corruption of fresh meat. Forecast microbiology describe the behavior of various microbe in specific circumstances based on computer technology. Through this, we can forecast the growth, residue and death of bacteria quantitatively. The essential part of Forecast Microbiology is building scientific mathematical model. With available experimental data, we can set up primary and secondary models to describe the growth dynamics of specific spoilage organisms at different temperature, pH value, water activity. Besides, we can develop forecast software, which may help to predict the shelf life and circumstance domination of shipping, storage, processing of chilled meat.
