摘  要:对鸭梨采后种子生理与果心褐变的关系进行研究。结果表明:鸭梨采后种子的呼吸类型为跃变型。晚采果种子的呼吸强度、乙烯释放量、褐变指数在贮藏期间高于早采果,而相对电导率较低;缓慢降温明显降低了早采果种子的呼吸强度、乙烯释放量和相对电导率,而对种子转色、PPO活性的影响不明显;降温方法对晚采果种子上述各指标的影响差异不显著。晚采果比早采果更容易褐变,缓慢降温较好地延缓了早采鸭梨的果心褐变。贮藏后期,种子呼吸强度、乙烯含量及相对电导率大幅度提高,且变化趋势与果心褐变的规律一致,说明种子生理与果实褐变存在一定的关系。The relationship between seed physiology and core brown ingofYaliafter harvest was studied. The results showed that respir atory type of Yali seed was of climacteric. The respiration rate, eth ylene production, colour changing index of seeds in late harvested Yali fruit during storage were higher than those of seeds in early har vested Yali fruit, and the relative electrical conductivity was lower. Slow cooling obviously decreased the respiration rate, ethylene production and relative elective conductivity, hut had little effect on col our changing index and PPO activity of seeds in early harvested Yali fruit. The effects of cooling methods on above index of seeds in late harvested fruits had no significant difference. The results indicated that late harvested fruits were easier to brown than early harvested fruits, and slow cooling can delay core browning of early arvested Yali fruits well. During the later storage period, the respiration rate, ethylene production and relative electrical conductivity rose sharply, and these variation trendency was similar to the regularity of core browning. It is speculated that there was some relationship between the seed physiology and core browning of Yali pear.
