摘　　要：对宁夏特有贺兰山紫蘑菇进行主要营养成分的分析,各成分的测定均采用国家标准方法测定。紫蘑菇中碳水化合物、蛋白质及灰分含量较高,尤其矿物质元素含量丰富,且P,K成分含量高。In order to provide the scientific basis for the industrial development and utilization, a special local variety in ningxia province, the nutritional ingredients in cortinarius purpurascens Fr＇s were ana lyzed; Determination of the components were measured using the na tional standard; The comparative analysis results showed that the cortinarius purpurascens Fr＇s have high content on carbohydrate, protein and ash, the content of minerals were rich, especially P,K.
