摘 要:目的:将二氢杨梅素进行酯化改性,考察二氢杨梅素酯化衍生物结构与抗氧活性间的内在关系。方法:采用改变乙酸酐与二氢杨梅素投料比,合成不同酯化程度的二氢杨梅素酯,并用猪油体系测定其抗氧活性。结果:用磷酸作催化剂,可有效地合成二氢杨梅素酯,所合成的化合物均有较强的抗氧化能力。结论:通过对二氢杨梅素酯化改性,明显地提高了二氢杨梅素的抗氧化作用能力。Objective =The dihydromyricetin(DMY) was esterified with acetic anhydride for modifying, and the internal relationship of the structure of DMY derivatives with their antioxidation effect was investigated.Methods.A series of DMY acetates were synthesized with different ratio of acetic anhydride to DMY,the antioxidation capability of them for lard was determinated. Results: DMY acetates could be synthesized effectively using phosphoric acid as catalyst,the antioxidation effect of DMY acetates were better than DMY in lard system.Conclusion.The antioxidation effect of DMY was strongly enhanced after modification and esterification.
