摘　　要：花青素是一类普遍分布于植物花瓣、果实、茎和叶等器官的水溶性类黄酮色素。阐述了花青素结构和基本性质,介绍了多种内含花青素的植物,归纳了花青素合成和分解进展,最后对花青素降解进行了展望。Anthocyanin is a type of aqueous flavonoid pigments located in petals, fruits,stems, leaves and the rest of plants. Structures of anthocyanin and its relevant properties are stated. Plants rich in anthocyanins are listed, research on synthesis and degradation of anthocyanins is summarized and prospects for degradation of anthocyanins are finally discussed.
