摘  要:目的探讨云南松花粉酶解肽的抗氧化作用。方法采用连苯三酚自氧化法、Fenton法、DPPH自由基清除法检测云南松花粉酶解肽对超氧阴离子、羟自由基和DPPH自由基的清除作用。结果用3种方法检测云南松花粉酶解肽均具有一定清除自由基的作用,浓度7.5 mg/mL时超氧阴离子自由基清除率达到64.45%,浓度30 mg/mL时羟自由基清除率达到72.99%,浓度3 mg/mL时DPPH自由基清除率为42.48%。结论云南松花粉酶解肽具有显著的抗氧化作用。Objective To investigate the antioxidant activity of the peptides from Pinus yunnanensis pollen (PHPP) by enzymolysis. Methods The p yrogallol auto-oxidation method, Fenton method and DPPH method were used to respectively measure the scavenging abilities of the peptides on superoxide anion radical, hydroxyl radical and DPPH radical. Results PHPP had the scavenging effects on all three radicals mentioned above. When the concentration of PHPP was 7.5 mg/mL, the scavenging rate was 64.45 % for superoxide anion radical; 30 mg/mL, 72.99 % for hydroxyl radical; 3 mg/mL, 42.48 % for DPPH radical. Conclusion The peptides from Pinus yunnanensis pollen by enzymolysis has an excellent antioxidant activity.
