摘  要:为了探讨河南大尾寒羊的屠宰性能和肉质特性,更好的服务于河南大尾寒羊的选种、选育和羊肉生产工作,对10只周岁的河南大尾寒羊进行了屠宰测定、肉质常规指标测定和肌肉氨基酸含量测定。结果表明,河南大尾寒羊周岁时的屠宰率为46.25%,净肉率为39.74%;肉质中水分含量为71.78%,脂肪含量为8.85%,蛋白质含量为22.49%,灰分含量为0.91%;肌肉干物质中的必需氨基酸含量为237.56 mg/g,非必需氨基酸含量为323.6 mg/g,总氨基酸含量为561.16 mg/g。In order to study the slaughtering characteristics and the meat quality of Henan big tail sheep and dedicate to new breeding selection and mutton production work, in this paper, the slaughtering characteristics, the conventional index and the amino acid content of the muscle with 10 Henan big tail sheep were determined. The result showed that the dressing percentage of yearling Henan big tail sheep was 46.25%, the meat percentage was 39.74%. The moisture content of the muscle, the fat content, the protein content and the ash content were 71.78, 8.85%, 22. 49% and 0. 91%, respectively. The contents of essential amino acids (EAA) of dried meat, non-essential amino acids (NEAA) and total amino acids were 237.56 rag/g, 323.6 mg/g and 561.16 mg/g, respectively.
