摘 要:桑椹含有多种生物活性物质,其中的多酚、黄酮类物质能够抗脂质过氧化,起到延缓衰老及润肤美容的功效。利用紫外分光光度法,对生产上大面积栽植的4个果桑品种鲜桑椹中的总多酚、总黄酮含量以及总还原活力进行测定,4个品种鲜桑椹中的总多酚含量以及氧化还原能力大小依次为红果2号、大10、5801、红果1号,总黄酮含量大小依次为红果2号、大10、红果1号、5801,其中红果2号桑椹中的总多酚、总黄酮和维生素C的质量比分别为3.683、4.095、3.164mg/g。测定结果可作为桑椹制品原料选择的参考依据。Mulberry fruits contain a variety of biologically active substances. Polyphenols and fiavonoids, the main active substances in mulberry fruits, have an effect of anti-aging and skin-softening. In this experiment, we employed ultraviolet spectrometry to measure the content of total polyphenols and total flavonoids and their respective total reducing power in fresh fruits of four mulberry varieties that are extensively cultivated in China. The result indicated that the total polyphenol content and oxidation-reduction capacity in four mulberry varieties was in the order as follows: Hongguo 2 〉 Da10 〉 5801 〉Hongguo 1, the total flavonids content was in the order as follows. Hongguo 2 〉 Da10 〉 Hongguo 1 〉5801. The mass ratio of total polyphenol and total flavonids in Hongguo 2 was 3. 683 and 4. 095 mg/g, respectively. The mass ratio of vitamin C which reflects the oxidation-reduction capacity is up to 3. 164 mg/g. The obtained results can be referenced for material selection in developing mulberry fruit products.
