摘  要:目的从藏灵菇发酵乳中分离益生乳酸菌,并研究其生理生化特性,为今后功能性乳制品的开发提供优良菌种。方法用乳酸菌分离培养基从藏灵菇发酵乳中分离乳酸菌;对分离的乳酸菌进行生理、生化鉴定和16S rRNA序列测定,并对其生长特性、耐酸及耐胆盐特性进行分析。结果从藏灵菇发酵乳中分离出两株乳酸菌LP1和LA1,初步鉴定两株乳酸菌分别为植物乳杆菌和嗜酸乳杆菌;并能抵抗pH 3.0的酸性环境和0.3%-0.5%的高胆盐环境。结论植物乳杆菌LP1和嗜酸乳杆菌LA1具有较好的耐酸性和胆盐耐受力,具备作为益生菌应用的潜能。Objective To isolate Lactobacillus strains from Tibet Kefir, study their physiological and biochemical characteristics, and provide good bacteria strains for development of functional dairy products in the future. Methods Potentially probiotic Lacto- bacillus strains were isolated from Tibet kefir, then subjected to physiological and biochemical identification as well as 16S RNA sequencing,and tested for acid-and oxgall-msistance.Results Two Lactobacillns strains were isolated,which could grow in MRS medium and showed resistance to acid (pH 3.0) and 0.3 - 0.5 % oxgall. These two strains were identified as Lactobacillus plantarum and Lactobacillus acidophilus. Conclusion The isolated Lactobacilli showed acid and oxgall resistances, and might be used as a novel probiotic.
