摘 要:目的:为了追踪观察嵊泗县市售食品卫生质量,了解生产加工食品与销售食品的质量差异。方法:运用统计学χ2显著性检验方法[1],对嵊泗县2004~2008年间17类食品卫生质量的随机抽检结果进行分析。结果:共监测食品样品17类5814件,检验合格5127件,抽样总合格率为88.18%;其中销售食品17类2888件,合格率为91.90%;生产加工食品12类2926件,合格率为84.52%。12类销售类食品质量显著高于同类生产加工类食品(χ2=42.92,P〈0.01);其中销售类的冷冻饮品、饮料和糕点质量高于生产加工类(χ2=11.98,59.46,9.06;P〈0.01);生产加工类水产品质量显著高于销售类水产品质量(χ2=28.17,P〈0.001)。结论:要进一步提高食品卫生质量,卫生执法部门有必要进一步加大卫生监督执法力度和深度。Objective:To investigate the hygienic quality of commercially available food in Shengsi market,and to find out the quality difference of food marketing and processing circle.Methods:Data of 5814 spot-checking samples from 17 categories of food were analysed by Chi-square test.Results:The total pass rate of food hygiene quality was 88.18%,91.90% in 2888 pieces of 17 categories of marking food,and 84.52% in 2926 of 12 categories of processing food.The quality of food hygiene of 12 categories of marking food were significantly higher than the same kind of processing food(χ2=42.92,P0.01);Among them,the quality of food hygiene of fast-frozen food,beverages,biscuits in marking food were higher than those in processing categories;However,the quality of processed aquatic products in processing field was higher than that in market.Conclusion:To further enhance the quality of food hygiene,it is nessesary for law enforcement departments to strengthen legislation,exercise strict quality control regarding food.
