摘　　要：本文对β-葡聚糖的结构、特征及β-葡聚糖酶的组成、作用方式、性质等作了概括性介绍，并对其在饲料方面的用途和今后的研究方向作了进一步阐述。The character, structure of β- glucan and the constitution, mode of action of β- glucanase were summarized in the paper. At last the application in feed and the study direction of the enzyme in future were indicated.
