摘  要:水果蔬菜的气调贮藏是一种极有开发价值的保鲜方法。建立反映气调库贮藏环境内传热传质过程的具有普遍意义的数学模型,对于用计算机来研究和优化设计贮藏系统是极有意义的。本文采用K-ε紊流模型建立了水果气调库内气体流动、传热与传质的三维数学模型,还水果的呼吸原理建立了货物区的热质传递控制方程,采用SIMPLE算法和整体求解法,编制了通用的计算程序,对气调库的降温、降氧过程进行了数值计算。同时,我们还对相应的过程进行了实验研究,测试结果与利用本文所编制的计算程序的计算结果吻合较好,从而验证了数学模型的正确性和计算程序的可靠性。The C.A. storage of fruits and vegetables is a potential valuable conservation method.It is meanful for investigation and optimization design of the storage system by computer to purpose a general mathematics model which describe the heat and mass transfer process in C.A.storage. In this paper by means of K ε model,the three dimensional physical and mathematical models for flow,heat and mass transfer inside a C.A.storage are established,the equations governing the heat and mass transfer through the products are built according to rhe fruit respiration theory. A general computer program using algorithm of SIMPLE and the solution of the whole region is developed,with which the process of temperature and oxygen density dropping are calculated. The experimental results of the process of temperature and oxygen density dropping in a C.A.storage agree well with the calculated data,which demonstrates the mathematics model and the simulation method are reliable.
