摘　　要：介绍了从羊肉下脚料羊血及羊骨中提取的一些生化制品的性质和功能，包括：凝血酶、超氧化物歧化酶、血红素、骨蛋白等，并对羊肉下脚料的合理利用提出了建议。The nature and function of the productions extracted from the mutton waste are mainly introduced, including： thrombin, superoxide dismutase, hemoglobin, bone protein and so on. Some new ideas for rational utilization of sheep blood and bone are put forward.
