云南产11种野生食用鲜花营养成分分析评价  被引量:16

摘  要:采用公认的标准方法对云南11种野生食用鲜花进行食用调查及营养分析。结果表明:11种野生食用鲜花主要营养成分含量因品种不同有较大差异、但营养全面,以优质蛋白、低脂、低热、高膳食纤维、高钾、低钠、低水溶性维生素为主要特点。有9种野生食用鲜花是民间药食两用植物,具有食疗保健作用。木棉花、棕榈花、金雀花具较高营养价值,海菜花因几乎不含脂肪和极低热量独具营养特点。大白花杜鹃花蕊含毒素,食用时要预防食物中毒。We conduct edible survey and analysis the composition of eleven nature edible fresh flowers from Yunnan province by using recognized standard method.The results showed that different cultivars,the major nutrients of eleven nature edible fresh flowers are different among.The nutrients of eleven nature edible fresh flowers are comprehensive and rich,especially rich in quality protein、low fat、low calorie、high dietary fiber、 high potassium、low sodium、water-soluble vitamins.Among these,nine kinds of nature flowers are used as medical and edible dual purpose plant in folk,with a therapeutic role in health care,which have therapeutic health care roles.Kapok、palm flowers and broom have higher nutritional value;because of almost non-fat and low calorie,Ottelia have the unique characteristics in nutrition.Food poisoning should be prevented when eating,because the pistil or stamen of Large-white flowers and Azaleas are poisonous.
