摘  要:针对传统酿酒酵母的酒精发酵温度低、耐酒性差、乙醇产率低和成本高等问题,进行了耐高温、高浓度酒精酵母的选育与耐受性能初步鉴定研究。通过广泛采集菌样,初筛、复筛,从22个样品中经分离得到S11、S12、S15、S17 4株在40℃均能较好生长的耐高温酵母菌;对S15、S17菌株进行紫外诱变育种,获得1株编号为S132的耐受性优良酒精酵母。与对照丹宝利耐高温酵母相比,S132耐受40℃高温和16%(v/v)乙醇的能力分别高出20.9%和15%,是一株良好的高耐受性酒精酵母。Yeast strains in ethanol fermentation industry usually have the disadvantages such as low tolerance of high temperature and ethanol, low ethanol yield and high cost. In this study, One yeast strain with high thermotolerance and ethanol-endurance was bred by traditional screening and ultraviolet (UV) radiation mutagenesis, its property was primarily characterized. Firstly, four strains S11, S12, S15 and S17 were obtained through collection,separation and putification from 22 samples, the strains showed a high thermotolerant characteristic when they were cultivated in 40℃ condition. Secondly, by UV radiation mutagenesis, a high thermotolerant and ethanol-endurant strain named S132 was bred from S15. Compared with Danbaoli thermal-tolerant alcohol yeast, the thermotoleranee and ethanol tolerance of S132 were higher 20.9% and 15% respectively, up to 40℃ and 16% (v/v)ethanol concentration.
