摘  要:【目的和方法】以6个核桃品种为试验材料,对种仁中氨基酸、含油率和营养元素的成分和含量进行测定与比较。【结果】新丰含油率最高,为70.3%,不饱和脂肪酸占91.3%;扎343含油率最低,但不饱和脂肪酸含量最高,为92.1%。6个核桃品种种仁中均含有人体必需的8种氨基酸,占氨基酸平均总量的29.41%。6个核桃品种种仁中营养元素的种类和含量都比较丰富,新早丰品种的含钙量最高;扎343中人体必须的微量元素铁含量最高;新丰种仁中膳食纤维含量明显高于其它5个品种;新丰品种中维生素E的含量最高,为0.60mg/100 g。【结论】从食用油角度考虑新丰品种可做为油用核桃良种开发。[Objective and Method] Using six walnut varieties as the experimental materials, the amino acid, the content rate of walnut oil and nutrient elements of kernels were measured and compared. [ Result] Xinfeng had the highest oil content rate, which is 70.3%, unsaturated fatty acid accounted for 91.3%. The walnut oil content rate of Zha343 was lowest, but it had the highest percentage of unsaturated fatty acid : 92.1%. All of the six walnut varieties contained eight amino acids necessary to human, which accounted for 29.41% of the mean amino acids total. The varieties and content of nutrient elements in the six walnut varieties were all rich. Calcium content was highest in Xinzaofeng. The microelement iron content in Zha343 was highest. Edible fibre content in Xinfeng kemel was remarkably higher than other varieties. The content of vitamin E in Xinfeng was highest as 0.60 mg/100 g. [ Conclusion]Xinfeng can be used to develop as a good walunt - for - oil variety.
