We investigated the effects of acute high ambient temperature and dietary supplementation of vitamin C on overall performance in quality chickens. At age of 56 d,162 Beijing-You chickens with similar body weight were randomly divided into 3 groups and assigned to the following treatments: the high ambient temperature, the high ambient temperature with dietary supplementation of vitamin C and the control. The treatment duration lasted 1 week and thereafter all the chickens were subjected to normal environment and same diets till 120 d.Results showed that the growth rate, daily weight gains, the capacity for antibody synthesis and the mortality of experimental birds were all affected negatively by the high ambient temperature. At the end of the experiment, the carry-over effects of early acute heat stress on broiler performance were not completely offset by compensatory metabolism, leading to a significantly lower marketable weight and PSE-like characteristics in skeletal muscle. The vitamin C supplementation was favorable for some variables with regard to growth performance, meat quality and immune responses of heat-stressed chickens.
