兖州市2005~2007年度月饼卫生质量检测分析

摘  要:目的:了解兖州市所售月饼的卫生质量状况。方法:对2005~2007年共420份市售的各类月饼进行微生物及理化指标检测。结果:3年来兖州市售月饼的总合格率为88.3%;菌落总数和过氧化值合格率较低,分别为91.7%、89.9%;不同品种以豆沙枣泥类月饼和其他类月饼合格率为最高,分别为92.6%和94.2%,合格率最低是五仁类月饼,为77.9%。3年间月饼合格率差别无显著性差异(P〉0.05);不同种类间月饼的合格率有显著性差异(P〈0.05)。结论:3年来全市月饼产品卫生质量较差,存在卫生安全隐患,相关部门应加强卫生监督管理。Objective:To understand the quality and hygiene status of marketing mooncakes in Yanzhou city. Methods :420 samples of all kinds of mooncakes were examined routinely from 2005 to 2007. Results : The total qualification rate of marketing mooncakes in Yanzhou city was 88. 3%,91.7% and 89. 9% in total bacterial count and peroxidation value respectively. The different kinds of mooncakes, the qualification rates of mungbean -jujube and other kinds of mooncakes were 92. 6% ,94. 2% respectively. While the kind of nutlets was the lowest, with the rate of 77.9%. There was no significant diference of the mooncakes during the 3 years (P 〉 0. 05) ;But the qualification rates among different kinds of mooncakes showed significant differences (P 〈 0. 05 ). Conclusion:The hygiene status and quality of mooncake products during the 3 years were bad, therefore supervision should be strengthened.
