摘　　要：研究了核桃壳棕色素对光照、温度、金属离子、pH值和食品添加剂、氧化还原剂的稳定性,为天然色素的开发应用提供理论依据.This paper is referred to the physical properties and chemical properties of the pigments in walnut shells, such as the affect of lighting, temperature, metalions, ph and food additives, oxidants, reductant. This reserche will provide a theoretical basis on development and application of natural pigment. Experiment walnut shells are from Sichuan.
