摘　　要：目的:了解武汉市场上熟肉制品中亚硝酸盐含量的情况。方法:按照国家标准GB/T5009.33-2003对武汉市场上135件熟肉制品中亚硝酸盐进行测定。结果:检测样品135件,依据《食品添加剂使用卫生标准》(GB2760-2007)判定,检出87件,超标4件,超标率3%。结论:应对武汉市场上熟肉制品加强管理,确保食品卫生安全,保证人民身体健康。Objective：To understand the nitrite residues in cooked meat produced and sold in Wuhan City.Methods：A total 135 samples were tested for nitrite according to GB/T5009.33-2003.Results：Judged by GB2760-2007,nitrite concentration of 4 samples were over standard,the qualified rate was 64%.Conclusion：The food hygiene supervision departments should take measures to reduce the nitrite residues in cooked meat.
