摘　　要：屠宰加工企业是优质猪肉供应链的核心企业,其质量安全控制能力是决定猪肉质量安全的关键。文中在简述优质猪肉供应链核心企业质量安全控制能力并分析其影响因素的基础上,从全过程控制的角度提出了优质猪肉供应链核心企业质量安全控制能力的综合评价指标体系,包括3项准则指标、8类基本指标、19个具体指标。The slaughterhouse is the core enterprise in the high quality pork supply chain,and its ability of quality and safety control is the key of pork quality and safety. This essay briefly discuss the constituted and effect factors of the ability with the core enterprise,and then from the perspective of the whole process raising the comprehensive evaluation index system of the quality and safety control ability with the core enterprise,including three kinds of criterion indexes,eight kinds of basic indexes and nighteen kinds of specific indexes.
