摘 要:在已有的微波法浸提栀子色素的研究中,微波辐照能够提高色素的浸提率。然而,微波辐照也导致了浸提液的温度升高,色素浸提率的提高是微波辐照的作用还是浸提液温度的升高所致,难于甄别。通过在同样温度下的微波辅助水浴浸提和直接水浴浸提的对比实验,结果表明无论是直接水浴法还是微波辅助的水浴法,随着栀子原料粒径的减小(粒度目数增加),浸提液温度的升高,浸提时间的加长,浸提率都能得到提高。在优化的浸提条件下,直接水浴法一次浸提率达64.7%,两次浸提率达88.8%,三次浸提率可达98.4%,而微波辐照下浸提,一次浸提率就达90.4%,两次浸提率超过99%,表明在相同的条件下,微波辅助的水浴浸提都比直接水浴浸提具有较高的提取率。Microwave irradiation could increase the extraction yield according to the previous research reports about microwave method used to extract gardenia pigment.However,microwave irradiation also made the temperature of extraction solution go up.It was difficult to distinguish which,microwave irradiation or temperature going-up,to increase the extraction yield of gardenia pigment? Comparison experiments of extracting gardenia pigment by microwave-assisted water bath method and by direct water bath method in same temperature were done in this paper.The results showed that the extraction yields went up as particle diameter of raw materials decreased(mesh number increased),temperature of extraction solution went up,extraction time increased whether by direct water bath method or by microwave-assisted water bath method.Under the optimum extraction condition,the extraction yield was 64.7% by one time extraction,88.8% by two times extraction and 98.4% by three times extraction by direct water bath method.However,the extraction yield was 90.4 by one time extraction,over 99% by two times extraction by microwave-assisted water bath method.It indicated that the extraction yield by microwave irradiation was higher than that by no microwave irradiation.
