摘　　要：本文简要介绍近红外光谱的发展历程、原理和应用特点,综述其在食品质量安全检测领域中开展掺伪使假、原产地鉴别、成分分析等方面的研究与应用情况,并对近红外光谱检测技术存在的问题以及今后的应用前景进行展望。This paper describes the development of near-infrared spectroscopy history theory and application characteristics, and in the field of food quality and safety testing carried out .Adulteration make false, identification of the origin, composition analysis, research and applications were reviewed and near-infrared spectroscopy detection technology problems and the future prospect of the application.
