摘  要:[目的]探讨微波消解-铬天青S分光光度法测定食品中铝的含量。[方法]在pH在6.7~7.0范围内,铝在乙二醇辛基苯醚(OP)和溴代十六烷吡啶的存在下与铬天青S反应,生成蓝绿色四元胶束,其吸光度与铝含量在一定浓度范围内成正比。[结果]铝含量在0.50~10.00μg呈良好的线性关系,相关系数r=0.9996,相对标准偏差小于2.91%,回收率在91.0%~102.0%之间,检出限为0.01μg。检测3类食品100份样品,其中馒头、油炸食品、膨化食品的合格率分别为92.5%、45.0%、85.0%。[结论]该方法操作简单,显色灵敏、稳定,可用于食品中铝的检测。[Objective] To explore determination of aluminum content in food with method of microwave digestion-CAS S spectrophotometry.[Methods]In the range of pH 6.7-7.0,aluminum in reaction with CAS S in the presence of ethylene glycol octyl phenyl ether(OP)and alkyl bromide 16 pyridine,forming blue-green quaternary micelles,their absorbance and the aluminum content is proportional to a certain concentration range.[Results]The aluminum content of 0.50-10.00 μg was a good linear,correlation coefficient r=0.999 6,relative standard deviation less than 2.91%,recovery at 91.0%-102.0%,the detection limit at 0.01 μg.Detection of 100 samples out of three categories of food,the passing rates of steamed bread,fried food,puffed food were 92.5%,45.0%,and 85.0% respectively.[Conclusion]The method is simple,color sensitive,stable and can be used for the detection of aluminum in food.
