番茄红素的生理功能和生产工艺研究进展

摘　　要：综述了番茄红素在防癌抗癌、抗氧化、预防心血管疾病、延缓动脉粥样硬化、抗衰老、保护皮肤等方面的生理功能,并简述了其国内外现有的生产工艺,最后对番茄红素的应用前景进行了展望。The physiological functions of lycopene were summarized from the aspects of anticarcinogenic activity, antioxidation, cardiovascular prevention, atherosclerosis delay, anti-aging, skin protection and so on. The existing production technology of lycopene at home and abroad were outlined. Finally, the application prospective of lycopene was predicted.
