摘　　要：魔芋是一种具有较高食用及药用价值的植物,具有抗衰老、调节胃肠道、降血脂、减肥、降血糖、补钙、抗肿瘤和调节免疫等功能。从魔芋的性状、采收贮藏、医疗保健功能、魔芋食品加工方法、魔芋产业SWOT分析等方面入手进行深入论述与探讨,为魔芋加工及相关产业的发展提供依据。Konjak is a plant of highly nutritional and medicinal values. It enjoys such functions as anti-aging, making adjustment to gastro-intestinal tract, decreasing blood fat, increasing calcium, anti-tumor and adjusting immunity. This article makes discussions on konjak in terms of its characteristics, collections, storage, medicinal functions, its processing, and SWOT analysis of the relative industry so as to provide reference for the sound growth of the industry.
