摘　　要：藠头是传统的药食兼用食品,对藠头中的植物化合物研究并进行产业化生产,对提高我国在国际医药市场和保健品市场的竞争力具有重要的实践意义。文章从植物化合物角度对藠头的活性成分进行了介绍,主要阐述了含硫化合物、皂苷类化合物等植物化学物质对人体的保健作用,并对合理利用藠头中植物化合物提出了建议。Onion is traditional food that can be used as medicine and food.And studying and industrial producing the plant compound in onion has important practical significance for improving the competitive power of China in international medicine market and heahh-product market.This paper introduces the active compound of onion from the aspect of plant compound,mainly explains the health effect of sulfur compounds,steroid saponins and other phytochemieals on human,and proposes suggestions for utilizing the plant compound in onion reasonably.
