摘  要:以脱脂桃仁粉为原料,研究了碱溶酸沉法提取桃仁蛋白的工艺条件。以桃仁蛋白提取率为指标,考察了提取温度、pH、料液比和提取时间对桃仁蛋白提取率的影响。在单因素实验基础上,通过响应面法(RSM)优化了提取工艺条件。结果表明,提取温度、pH和料液比对桃仁蛋白提取率影响较大;优化的桃仁蛋白提取工艺条件为:料液比1∶15,提取温度47℃,pH 9.2,提取时间1.0 h。在优化工艺条件下,桃仁蛋白的提取率达93.89%,其蛋白质含量为86.83%。Alkaline-extraction and acid-precipitation method was employed to prepare peach kernel protein from defatted peach kernel powder.The effects of extraction conditions including temperature,time,pH and solid-to-liquid ratio on the extraction rate of the protein were investigated.The extraction process was optimized by the response surface methodology(RSM).The results showed that the temperature,pH and solid-to-liquid ratio had significant influences on the extraction rate.The optimum conditions were as follows: temperature 47℃,time 1.0 h,pH 9.2 and solid-to-liquid ratio 1∶15.Under the conditions the extraction rate of peach kernel protein was 93.89%,and the protein content reached 86.83%.
