摘　　要：概述了蔗糖多酯的结构及主要性质,重点综述了蔗糖多酯的合成方法,包括酰氯酯化法、直接脱水法、酯交换法,其中酯交换法包括有无溶剂两种方法。同时对蔗糖多酯的分析方法和在生产生活中的应用进行总结。components and main properties of sucrose polyesters were summarized.Synthetic methods of sucrose polyesters which included acyl chloride esterification method,direct dehydration,and trans-esterification method were elaborated.Trans-esterification method included solvent method and non-solvent method.The analysis methods and application in production of sucrose polyesters were also summarized.
