摘  要:[目的]本文评价膳食调查大豆异黄酮摄入量估算值与尿液中大豆异黄酮代谢物测定值之间的相关性。[方法]采用大豆食物频数问卷(SoyFFQ),对南京市不同社区共469名妇女大豆相关食品摄入量进行调查,利用美国食物成分数据,计算两种大豆异黄酮(染料木黄酮genistein和大豆苷元daidzein)每日摄入量;其中30名调查对象提供尿液样本,采用超高速液相色谱-串联质谱(UPLC-MS/MS)方法测定尿液中大豆异黄酮代谢物的浓度;采用高效液相(HPLC)方法测定部分大豆食品中染料木黄酮(genistein)和大豆苷元(daidzein)的含量。[结果]469名妇女膳食调查摄入量估算值:染料木黄酮(genistein):(50.7±31.6)mg/d,大豆苷元(daidzein):(33.4±35.9)mg/d;30份尿液中大豆异黄酮代谢物测定值:染料木黄酮(genistein):(515.9±674.5)μmol/mol,大豆苷元daidzein:(927.7±1107.2)μmol/mol。染料木黄酮(genistein)和大豆苷元(daidzein)膳食调查摄入量估算值与尿液中大豆异黄酮代谢物测定值相关系数分别为:0.59和0.57(P﹤0.05)。[结论]可以认为染料木黄酮(genistein)和大豆苷元(daidzein)摄入量估算值与尿液测定值具有相关性,为国内进行大豆异黄酮与乳腺癌发生风险的相关研究提供的可靠数据和方法。[Objective]To evaluate the relationship between dietary intake of soy isoflavones estimates and spot urine metabolites of soy isoflavones.[Methods]A total of 469 women of different communities in Nanjing completed the soy food frequency questionnaire(FFQ).The two kinds of soy isoflavones(genistein and daidzein)daily intake were determined by referring of the American food composition data.30 provided spot urine specimens,soybean isoflavones in urine metabolite concentrations,and these samples were detected by UPLC-MS/MS method.Genistein and daidzein in some selected soy food were analyzed by HPLC.[Results]Among all 469 women,mean genistein and daidzein intakes were 50.7±31.6mg/day and 33.4±35.9mg/day;The genistein and daidzein in urine specimens were as follows:genistein was 515.9±674.5 μmol/mol,and daidzein was 927.7±1107.2μmol/mol.Spot urine sample measures were correlated with soy FFQ estimates of genistein(Spearman r=0.59)and daidzein(Spearman r = 0.57)(P﹤0.05).[Conclusion]Estimates of genistein and daidzein has relationship with urine determination,which could provide solid data and method for study on the soy isoflavone and breast cancer.
