摘  要:利用体外试验测定耐氧性双歧杆菌(Bifidobacterium animalis subsp.lactis Qq08)的耐酸、耐胆汁特性;同时测定其对胆固醇的降解能力和对结肠癌腺细胞Caco-2的黏附性能。结果表明,该菌在pH 2.0条件下培养4 h,仍有84.38%的存活率;用1.0%胆汁培养6 h,该菌的存活率在90%以上。该菌对胆固醇的降解力为53.8%,对结肠癌腺细胞Caco-2的黏附数为(8.57±3.74)个/细胞。该菌可作为益生菌制剂和功能性乳制品的潜在菌株。In order to lay a foundation for its production and utilization in probiotic products,the functional properties of Bifidobacterium animalis subsp.lactis Qq08 were studied,namely the resistance against low pH and high bile concentration,cholesterol-reducing ability and adhesion properties were tested by in vitro studies.Results indicated that strain Qq08 showed high tolerance to low pH,giving a survival rate of 84.38%,at pH 2 after 4 h incubation,and high tolerance to bile,more than 90% after 6 h incubation at 0.01 g/mL bile concentration.The cholesterol-reducing rate of strain Qq08 was 53.8%.The adhesion ability number to Caco-2 was(8.57±3.74)CFU/cell.The strain Qq08 performed excellently in probiotic characteristics and it can be used as potential strain in development of probiotics and functional dairy products.
