摘 要:对上海市场上常见有机和常规大米进行了品质分析,结果表明,有机大米碾米质量好于常规大米;仅有2个品牌的有机大米含水量低于常规大米;有机与常规大米蛋白质含量差异不显著。有机大米的Cd、As、Pb和Hg重金属残留显著低于常规大米;7种有机大米均没有检出黄曲霉毒素、溴甲烷、甲基嘧啶磷、马拉硫磷、溴氰菊酯、六六六、DDT;5种常规大米仅检出甲基嘧啶磷、马拉硫磷、溴氰菊酯3种农药残留,但符合GB2715-2005标准。Quality of several kinds of organic and conventional rice from Shanghai market was tested.Results showed that milling quality of 7 kinds of organic rice was better than that of conventional rice.There was no significant difference in the water content of organic rice except that 2 brands of organic rice were lower.The differences of protein content between organic and conventional rice gave no significance.The concentrations of heavy metal of CdA,sP,b and Hg in 7 kinds of organic rice were lower than that of conventional rice.All of 7 sorts of organic rice were not detected out residues of aflatoxin B1(AFB1),bromomethanep,irimiphos-methyl,malathiond,eltamethrinH,CH and DDT,and residues of pirimiphos-methyl,malathiond,eltamethrin were tested out for 5 kinds of conventional rice but their values did not exceed the maximum residue limits(MRL)of GB2715-2005.
