摘 要:目的为探讨不同品种黑木耳中铁含量的差异,选用国内市场上常见的八种不同品种的黑木耳。方法采用二氮杂菲光度法测定黑木耳子实体、黑木耳水提液、料渣及黑木耳多糖中的铁含量,并使用微波消解法进行样品的前处理。结果黑木耳不同品种子实体间铁含量差异很大,且黑木耳不同部位的铁含量随品种不同变化较大,黑木耳多糖中也有少部分铁存在,含量占子实体的7.14%~23.94%。结论浙江黑木耳(Aa6)和东北秋木耳(Aa7)含铁量较高,是两类较好补铁品种。Objective To study the differences of the variety of the iron content from Auricularia auricula,eight different type of Auricularia auricula that often sold in market were chosed.Method The iron content was determined from the fruitbodies,the aqueous extract,the slag of Auricularia auricula and the Auricularia auricula polysaccharide by the phenanthroline spectrophotometry.Results there are great variations of the iron content both in different variety and in the different position to Auricularia auricula,and there is some iron in the Auricularia auricula polysaccharide accounting for 7.14% to 23.94% of the fruitbodies of Auricularia auricula.Conclusion The iron content of Auricularia auricula from Zhejiang(Aa6) and Northeast China(Aa7) is more and suitable for supplement iron.
