摘　　要：动物屠宰方式、饲料安全性、饲养环境是动物福利的重要组成部分。粗暴屠宰能诱发产生PSE肉和DFD肉;在饲料中超剂量使用添加剂或使用违禁兽药会造成严重的药物残留问题;饲养环境不符合动物福利的要求是动物疫病发生与传播的诱因。动物福利从根本上影响着动物源性食品的安全,如果不遵照动物福利标准,动物源性食品的安全性就难以保证。Animal slaughter methods,feedstuff safety and feeding environment are all the important part of animal welfare.If the animals are brutally slaughtered,PSE（Pale,Soft and Exudative） and DFD（Dark,Firm and Dry） meat,a bad quality meat is usually produced.If too much antibiotics and additive are added in the feedstuff,a serious drug residues problem will happen.Animal welfare decides the safety of animal-derived food.If the animal welfare standards are not observed well,the safety of animal-derived food will be difficult to guarantee.
