摘  要:系统地研究了湖南省主要柿品种果实的生长发育过程和多酚种类含量变化规律。结果表明:柿果实生长发育过程呈双S曲线;涩柿和甜柿各时期总酚的变化趋势基本一致,但涩柿的总酚含量比甜柿高,且涩柿多酚的下降速度慢于甜柿;以柿果实多酚的利用价值而言,9月上旬采集本地品种柿果实深加工比较合适,冷藏保存,时间不宜超过7d。The growth process of fruit and the variation trend of polyphenol content in main persimmon variety in Hunan Province were systematically studied.The results showed that the growth process of persimmon fruit showed double-S curve;the variation trends of total polyphenol content in sweet persimmon and astringent persimmon are almost the same,but the total polyphenol content in astringent persimmon was higher than that in sweet persimmon,and the decreasing rate of polyphenol in astringent persimmon was lower than that in sweet persimmon;from the aspect of the use value of polyphenol in persimmon fruit,the early September is suitable to pick persimmon fruit of local varieties for intensive processing,and the processed products should refrigerated and storage time should not exceed 7 days.
