摘　　要：虾青素是一种天然类胡萝卜素，具有较强的抗氧化作用。法夫红酵母是一种能合成虾青素的真菌。本文主要概述法夫红酵母高产虾青素菌株的育种、高产株选择。Astaxanthin is a kind of natural carotenoids which has strong antioxidation. Phaffia rhodozyma is an astaxanthin-producing yeasts. In this review, we introduce the method of growing and selecting high-yield stains of Phaffia rhodozyma , the perfect conditions of cultivation and the methods of extracting and determing astaxanthin.
