摘 要:[目的]对北京市大兴区各类食品进行金属污染物指标的监测和分析,了解食品中金属污染物的污染状况,为政府部门食品安全监管提供科学依据。[方法]2006~2009年在区内共采集主要食品324份,检测食品中铅、镉、总汞等金属污染物,将检测结果与国家相关标准对照。[结果]食品中铅、镉、总汞的合格率分别为94.7%(307/324)、96.6%(313/324)、93.5%(145/155)。各类食品中重金属铅、镉、总汞含量均值分别为0.077 1、0.171 9、0.009 mg/kg,差异均有统计学意义(P〈0.01、0.01〈P〈0.05、0.01〈P〈0.05)。[结论]食品中重金属铅污染比较普遍,罗非鱼、饮料、蔬菜、鲜奶类产品铅平均含量高于其他类食品;干食用菌、猪肾脏、干藻类产品的镉污染较其它类食品高,干食用菌总汞的污染严重。[Objective] To monitor and analyze heavy metal pollution in foods in Daxing area and understand the status of metal pollution in foods,so as to provide scientific basis for government supervising food safety.[Methods]324 food samples total were collected and carried out food analysis of lead,cadmium,hydrargyrum in Daxing area from 2006 to 2009.The results were compared with the national standard.[Results]Samples qualified rate with the levels of lead,cadmium and hydrargyrum in foods accounted for 94.7%(307/324)、96.6%(313/324)and 93.5%(145/155)respectively.The average content of lead,cadmium and hydrargyrum in various types of food were respectively 0.077 1,0.171 9,0.009 mg/kg,and the differences were statistically significant.(P0.01,0.01P0.05 and 0.01P0.05).[Conclusion]In Daxing,the contamination of lead is generally detected in almost all samples.The level of lead in tilapia,beverage,vegetables,fresh milk is higher than other foods.The level of cadmium in dried mushroom,pig kidney and dried algae is higher than other foods.The contaminants of hydrargyrum in dried algae is severe.
