摘　　要：天津开埠后,随着国内外贸易、近代工商业、文化教育事业等发展,居民消费结构、消费观念发生了巨大变化。《大公报》创办人英敛之在其日记中较为详细记录了19世纪末20世纪初天津中、上层居民饮食消费概况,本文以其日记为中心对近代天津居民饮食消费结构、消费观念发生的变动、变动的原因及对天津餐饮业、食品加工业、餐饮观念产生的影响进行探究。As the development of the domestic and foreign trades, modern industries, and educational undertakings, the diet consumption structure and consumption concept of Tianjin residents had tremendously changed.There were many records about Tianjin residents food consumption in the turn of 19th-20th century in Ying Lianzhi diary. The article has researched Tianjin residents＇ changes in food consumption structure and consumption concept, its cause of the changes and their inflences on modern Tianjin catering industries, food processing industries, catering ideas on Ying Lianzhi diary.
