摘 要:合理的原料预处理工艺能有效提高高温豆粕的水解度,胰蛋白酶具有很强的专一性,水解程度较低。考察了不同挤压膨化条件对胰蛋白酶酶解高温豆粕效果的影响,以螺杆转速、物料含水率、模孔直径、套筒温度、进样量为因素,以水解度为检测指标,采用5因素5水平(1/2实施)进行二次正交旋转组合试验设计,得到了膨化挤压高变性豆粕优化的预处理工艺参数:温度110℃,转速101.28 r/min,模孔4 mm,含水量29.96%,进料量0.4 kg/min,此条件下胰蛋白酶水解膨化豆粕水解度达12.60%,与原料水解度相比提高了4%。Degree of hydrolysis of denatured soybean meal can be improved by reasonable crude pre - treatment technologies. Trypsinase has low degree of hydrolysis and high specificity. In this paper, effects of different conditions of extrusion on trypsinase enzymolysis of denatured soybean meal were studied. Quadratic rotation - orthogonal combination design was established with five factors ( screw speed, material moisture, die throat diameter, bushing temperature and sample size) and five levels (1/2 executed),with the degree of hydrolysis as determination index,and the optimum conditions of extrusion on denatured soybean meal were obtained: extrusion temperature 110 ℃ ,screw speed 101.28 r/min,die throat diameter 4 mm,material moisture 29.96% and sample size 0.4 kg/min. Under such conditions, the enzymolysis degree of extruding soybean meal reached 12.60% ,increased by 4% compared with that of the unprocessed soybean meal.
