摘  要:分别取罗非鱼、草鱼、鲢鱼皮,用氯仿-甲醇(2:1,v/v)提取脂质,BF3-甲醇为衍生化试剂,利用GC/MS分析了脂肪酸的百分含量。三种鱼皮中主要含15种脂肪酸,以不饱和脂肪酸为主,平均含量达79.13%。饱和脂肪酸(SFA)平均含量为24.19%,主要为棕榈酸;单不饱和脂肪酸(MUFA)平均含量为28.61%,主要为油酸;多不饱和脂肪酸(PUFA)平均含量约为47.20%,主要是亚油酸、花生四烯酸及亚麻酸。而鲢鱼的EPA及DHA的含量高达19.79%。结果表明,三种淡水鱼皮中都舍有丰富的不饱和脂肪酸,尤其是鲢鱼皮多不饱和脂肪酸的含量较高,营养价值较高。The skin lipids of tree kinds of freshwater fish, namely tilapia, grass carp and silver carp, were extract with Chloroform - methanol (2: 1, v/v) and Derivatived with BF3- methanol, than the samples were analyzed by GC/MS. It contained 15 species fatty acids in it and the fatty acid mainly is unsaturated, the average content counted 79.13%. The saturated fatty acids (SFA) are 24.19%, the mono-unsaturated fatty acids (MUFA) are 28.61% and the Polyunsaturated fatty acids (PUFA) are 47.20% On average. The main constituent of SFA is palmitic acid, MUFA is oleic acid .and the PUFA are linoleic acid, arachidonic acid and linolenic acid, while the silver carp's EPA and DHA content reaches 19.79%. The results showed that the skin of the three kinds of fresh water fish are rich in unsaturated fatty acids, especially the skin of silver carp is more trophic value as its PUFA is higher than others..
